Ingredients

  • 100g caster sugar
  • 2 large free-range eggs, separated
  • 600ml whole milk
  • ¼ tsp vanilla extract
  • 100ml rum or bourbon
  • 100ml whipping cream
  • ½ tsp freshly grated nutmeg

Equipment

Balloon whisk or electric hand whisk

Mixing bowls

Saucepan

8 punch glasses

Food grater

Method

Step 1

In a separate bowl beat the egg whites until they form soft peaks. Once done then fold into the cooled egg and milk mixture. Beat the whipping cream until thick and then fold three-quarters of this into the mixture. After that chill everything in the fridge until ready to serve.

Step 2

Heat the milk in a saucepan over a medium heat until it is almost boiling. After that remove the milk from the heat and pour it into the egg and sugar mixture, whisking all the time whilst doing this. Pour the whisked mixture back into the pan and heat gently whilst stirring until the mixture is smooth and slightly thickened. Add the vanilla and rum or bourbon and whisk well. Once done remove it from the heat.

Step 3

Put the caster sugar and egg yolks in a bowl and whisk it together with either a balloon whisk or electric hand whisk until the mixture is thick and creamy.

Step 4

To serve, ladle into 8 punch glasses and dollop 1 tsp of the remaining whipped cream on top of each. Finish with a good grating of nutmeg on each glass.

Personally I think this is a great take on a Christmas classic and one that is bound to go down a treat with the family and friends.

NB: Drink contains alcohol and is strictly for the consumption of 18 year olds and overs. Please drink wisely and do not give the drink to people under the age of 18.
